Chia jam recipe
Here's a dietitian's version of jam đThis healthy alternative includes strawberries for fibre and chia seeds for protein and omega 3s. Strawberries are coming into markets now at a reasonable price and if you're anything like me, you can use up that stash of chia seeds you've had lingering in the back of the pantry for ages đđź Using strawberries also means the 'jam' is naturally sweet, so needs very little added sugar for taste! â

Ingredients:
1 cup of strawberries đ đ(I used tired looking ones that weren't going to get eaten fresh!)
juice from 1/2 a lemon đ
1tsp brown sugar
1tbsp of chia seeds Method:â Chop strawberries and simmer on low heat for 5-10 mins with a splash of water đŚ . You're aiming for the fruit to be soft and mushy.
Take off the heat. Squash fruit with a masher (this is a great job for kiddies- with supervision).
Stir through the sugar and lemon juice.
Mix in the chia seeds and leave to stand for at least 5 mins before transferring to a jar. The chia seeds will thicken the jam as they absorb some of the liquid. â Keeps 2 weeks in fridge or up to 3 months if frozen.
Use as a spread on toast or add a dollop to your yoghurt.
